A uva roxa, Vitis vinifera L. (Vitaceae)
seus sucos e vinhos na prevenção de doenças cardiovasculares
Resumo
Este trabalho é uma revisão do papel do resveratrol presente nos vinhos tintos que estão relacio-nados com a prevenção das doenças cardiovasculares. A etiologia da aterosclerose esta intimamente associada com a presença de espécies reativas de oxigênio e da oxidação de LDL-colesterol, como agentes iniciadores ou partici-pantes nas varias etapas do processo aterogênico. O resveratrol possui alto poder para seqüestrar os radicais livres de oxigênio. Os vinhos são constituídos de água, ál-coois, açúcares, ácidos orgânicos, proteínas e seus produ-tos de constituição, polifenóis, pigmentos, sais e vitaminas. O efeito cardioprotetor do vinho pode ser atribuído ao resveratrol. Os estudos epidemiológicos revelaram uma reduzida incidência do risco cardiovascular associada com os consumidores do vinho tinto, isto popularizado com o paradoxo francês.
